ABOUT THE HERB SCHOOL

After almost three decades of working with herbs and wild plants on a professional basis, The Herb School was established by Denise with the aim of sharing her love and knowledge of these valuable plants through her online and in person classes, workshops and foraging walks.
 
Weeds are her favourite plants, and her mission is to de-mystify the world of herbs and native flora and to educate people in the many ways they can be easily incorporated into our everyday lives and how we can benefit from their valuable nutritional and health enhancing benefits.

A School without Walls

The Herb School isn’t necessarily based in any one physical location. It is a concept, rather than a place. The classroom can be anywhere. It can be found in the obvious natural habitats in the countryside – woodland and hillsides, cliffs and coasts, fields and country lanes. But it can also be found in villages and towns and cities, not only in parks and gardens, but on waste ground, roadsides and kerbs.

Wild plants are resilient, they are here for a purpose, and they do their utmost to not only survive, but thrive, even when dealing with the most challenging conditions. They battle chemical pollution, herbicides and pesticides, yet they are still around to serve their purpose, despite over a century of attempted eradication in the name of gardening and agriculture.

It is time for change, and my mission at The Herb School is to educate as many people as possible about these valuable plants. Not only do these humble plants benefit us humans by offering their nourishing and healing properties, but the entire ecosystem also depends on them to maintain balance and diversity on this fragile planet that we call home.

When we become aware of the native wild plants that grow around us, and we begin to explore and learn about their valuable uses, we look at them with a newfound respect. This brings us closer to nature and encourages us to engage with our natural environment and make better choices for ourselves and our planet. When we share this knowledge with others we can begin to make a real difference.

Over the past three decades, Denise has been widely recognised across Irish media for her expertise in growing herbs, foraging, wild food and natural living, and her work has been featured in leading print publications. She has also contributed articles, seasonal tips and recipes to a variety of food and gardening print and online media.

Denise has appeared on a range of television programmes and has been a regular voice on national and local radio over the years. She worked with Gerry Kelly of LMFM on a popular Herb of the Month series, and has also featured in interviews and on podcasts, where she continues to share her knowledge of culinary and medicinal plants with a wide and growing audience.
