Wild Garlic Experience

A TASTE OF WILD GARLIC

Wild garlic is one of the tastiest and most nutritious of our native Irish wild spring herbs. The two best known varieties are wide leaved ramsons, found in deciduous woodland, and three-cornered leek or triangular stalked garlic, often found on country lanes.

Ramsons has a delicious and pungent garlicky taste and makes a wonderful pesto or flavoured oil. It is in season for a relatively short time, usually from March to May. It tastes best and is at its most nutritious before it flowers, so early to mid-spring is the ideal time to harvest it and preserve it for use throughout the year.
