Wild Garlic Experience
A TASTE OF WILD GARLIC
Wild garlic is one of the tastiest and most nutritious of our native Irish wild spring herbs. The two best known varieties are wide leaved ramsons, found in deciduous woodland, and three-cornered leek or triangular stalked garlic, often found on country lanes.
Ramsons has a delicious and pungent garlicky taste and makes a wonderful pesto or flavoured oil. It is in season for a relatively short time, usually from March to May. It tastes best and is at its most nutritious before it flowers, so early to mid-spring is the ideal time to harvest it and preserve it for use throughout the year.

Testimonials
What our participants say about their learning experience at The Herb School
I wandered toward the river in my town today and literally as far as the eye can see is wild garlic. Thank you so much for this wisdom. We’re going back tomorrow to harvest some because the pesto recipe you gave us was delicious!

Denise is a wonderful guide with a vast knowledge about every single plant around us. We went on an extensive walk and still only scratched the surface in terms of foraging, cooking and medicinal effects some of these plants have. I’ll definitely be back for another foraging walk!
Corinna Gast
Denise has great knowledge and stories to share. She creates a very welcoming and nurturing experience. I will be back.
Lisa Brooks
Such a refreshing new way to explore Dublin off the beaten track. If alternative cooking and using natural native ingredients are of interest to you, the foraging workshop is definitely something you will enjoy.
